Kanchan's Healthy Cinnamon Pancakes

Ingredients

  • 2 bananas
  • 2 eggs
  • 1 cup oats
  • 1/2 tsp baking powder
  • 2 tbsp honey (skip for babies)
  • 1 tbsp chia seeds
  • 1 tsp Ceylon cinnamon
  • Blue dye (1/6 tsp per serving)
  • Vegetable oil (for cooking)
  • Blue dye (1/6 tsp per serving)

Step-by-step instructions

  1. Blend everything except the vegetable oil into a batter.
  2. Add vegetable oil to a pan over a medium heat.
  3. Dollop 1/4 cup of batter per pancake in the pan and fry for 2 minutes on each side until golden.
  4. Drizzle with maple syrup, top with fruit, and dig in.
