Honeynut is an incredible squash that packs concentrated sweetness and beta-carotene into a single-serving squash with a flavor like no other. This little squash is bred by Dan Barber and his team at Row 7 Seeds, and is sourced by Natoora in both the US and UK.
If you aren't able to get your hands on honeynut squash, you can use any other type of good roasting squash in this recipe, including the delica, koginut or Thelma Sanders varieties.
